Fact: This is known as a 'Bloody Rosé' from 100% Cabernet Sauvignon. It is called this because of the wine making process used called "saigner," meaning "to bleed" in French. During this saigner process, a touch of color is leeched from the skins of red grapes (all grape juice is more or less clear without skin contact – ie pinot noir in Champagne) prior to fermentation, leaving the finished wine a dark salmon color. Food Pairing: Anything summery, light and Mediterranean! – green garlic soup, asparagus, Kale, but also great as a pre-dinner drink!
